This tour includes 7 nights in a stunning Masseria with private pool in the heart of magical Puglia. The Masseria is immersed in a wonderful expanse of 400 year old olive trees and only a few kilometers away from the golden beaches and crystal water of the Adriatic. This is a week of complete culinary exploration as we learn about Italy’s Cheese and Salumi, Olive oil, Fresh Pasta, Bread and Focaccia, Fresh Fish and Garden Vegetables. Your daily cooking classes will be hosted by International Chef Melina Puntoriero, Filippo de Miccolis Angelini, Representatives of Slow Food and Local Artisans. You will meet Michelin Chef Angelo Sabatelli and dine at his Michelin-starred ristorante situated in a 17th century farmhouse. Daily excursions to exclusive Artisan producers of the region, markets, wineries, and much more make this an experience not to be missed.

Arrival to Fumiucino airport in Rome and connect your flight to Bari Airport. We begin our journey right in the heart of Puglia where the contrast of the deep blue sea fights the rawness of the ancient olive groves of Masseria Salamina. To arrive at the Masseria, you will be transferred from Bari Airport or Station.
Salamina is the name which the Masseria has had since the 1600’s and has become one of the luxury Agriturismi in Puglia. Since the existing settlement was expanded and the olive trees were planted 400yrs ago, the Masseria and surrounding lands have undergone various periods of renovation. The farm is now completely green and organic and an important biological teaching farm. The grounds are exquisite, as is the expansive pool set amongst the lush lawns.

Today is all about Italy’s Cheeses and Salumi. The stars in the south are Mozarella and Capocollo, both of which hold the prestigious appellation for Protected destination of Origin (PDO). This morning we head out to the countryside where we will watch both of these being made. Our highlight being the delicious burrata, a typical cheese of the area and only produced in Puglia. We spend time to chat with these Artisans as they make this soft and creamy delicacy before heading off to our Salumi producers where you will learn to tie your own capocollo and learn the art of curing meats. We will head back to the Masseria to enjoy a spectacular antipasti style lunch with a very special host from ‘Slow food Italy’ as we graze true Italian style on an antipasto style lunch that no-one in the world does better than the southern Italians. Of course, all food will come from our kitchen gardens.
This afternoon we enjoy our Italian siesta either by the pool or you could wander the grounds. Dinner this evening will be at the Masseria.

This morning we head out for a walk through olive groves, caves and country roads at an authentic underground oil mill as we learn all about the production of olive oil and harvest amongst trees that have a history of more than 400 years. We then head back to our Masseria for a complete hands-on cooking lesson in the age-old art of preserving with oil. With produce from the local market and our kitchen garden, we learn how to make traditional preserves that form an important part of Italian menus’ all over Italy. We will enjoy a beautiful open air lunch in the courtyard of our castle and where we can discuss how to replicate everything once you get home.
After a dip in the pool and a few vino’s, we head for the picturesque town of Polignano a Mare, a shining gem on the coast of the Valle d’Itria, perched atop a 20 metre-high limestone cliff above the crystal clear waters of the Adriatic. Here we will introduce you to one of Southern Italy’s most famous gelaterias and granita makers. After a guided walk of the narrow streets, we will stop for an aperitivo and casual dinner at a local seafood place amongst the busy night streets for an experience that is a must even with the locals.

Today is a day you will never forget and so we head out to the gardens early to prepare for our special lunch. Today’s cooking class is all about fresh vegetables and home grown herbs. Our chefs will introduce you to some of Italy’s most exquisite dishes in a hands-on cooking class where we will prepare for our beach side picnic. Once we have everything packed you will each grab a vespa as we take to the coastline on an unforgettable tour along some of the most spectacular scenery this side of the Adriatic. We will stop at a local beach for our picnic before heading back to the Masseria for some well deserved relaxation and a casual dinner.

Today is all about Pasta. In this morning’s lesson, we will roll and cut more than 20 different types of traditional hand made pasta with Italy’s pasta expert and tour host Chef Melina Puntoriero. We will learn about all the different flours and artisan grinds as well as using natural colours to make beautiful dishes.
After an afternoon siesta to digest our carbo fuelled lunch we head out for a truly unique Puglian experience to dine in a local butcher shop where our hosts will introduce us to the Puglian delicacy of ‘bombette’.

Antonio Vasile is one of Italy’s most acclaimed writers and expert in all things fish. This morning Antonio will take us out on a private boat on a fishing expedition that will leave you breathless. After a stop at also at the local fish market, the heart of most of the south’s bustling day we head to the Masseria as Antonio will help us to prepare our extravagant seafood lunch.

This morning will be an early start as we head to the whitewashed walls of the breath taking town of Ostuni. Regarded as an architectural jewel, Ostuni is commonly referred to as “the White Town” for its white walls and its typically white-painted architecture, at the heart of which sits the magnificent gothic cathedral. Forget Santorini, Ostuni is the new pride of Europe. After an early morning tour of the prided markets amongst the hidden alleys, workshops and Baroque churches we have time for a quick ‘caffe’ before setting off to one of Italy’s most spectacular wineries.
This afternoon take some time to pack for tomorrow’s departure then we glam it up to head out to the seaside town of Monopoli. Here we will settle in the piazza for some Aperitivo and people watching before making our way to the Michelin Restaurant of Acclaimed Chef Angelo Sabatelli.
